Pro-tip: Keep two bottles. Use a good, solid Italian oil for cooking and sautéing, but keep a premium, estate-grown Sicilian oil for "finishing." Drizzling that high-end oil over a piece of grilled fish or a simple salad is a total game-changer.

Ingredients:
- 350g Casa Milo Rigatoni
- 4 tbsp Extra Virgin Olive Oil
- 3 cloves garlic, smashed
- 3-4 anchovy fillets
- 1 tbsp capers (rinsed)
- 1/2 tsp chili flakes
- A handful of breadcrumbs (the "poor man's parmesan")
- Dried Sicilian oregano
Instructions:
- Boil a large pot of salted water and drop your pasta.
- In a large pan, heat the olive oil over medium heat. Add the garlic and anchovies. Use a wooden spoon to mash the anchovies until they dissolve into the oil.
- Add the chili flakes and capers. Let them sizzle for a minute.
- In a separate small pan, toast your breadcrumbs with a tiny bit of oil until golden brown.
- When the pasta is al dente, toss it directly into the oil mixture with a splash of pasta water.
- Turn off the heat, sprinkle with a lot of oregano and the toasted breadcrumbs.
- Serve immediately.
