Use it to fill your own pastries, swirl it into gelato, or: if you’re like us: just eat it with a spoon when nobody is looking. In a Chestnutshell: A Simple Pantry Recipe
Let’s put these essentials to work. This is a classic "Pantry Pasta" that we make when the fridge is empty but the soul is hungry.
Pasta ca’ Muddica (Breadcrumb Pasta)
Serves 2 | Prep time: 5 mins | Cook time: 10 mins
Ingredients:
- 200g Casa Milo Orecchiette or Spaghetti
- 4 tbsp Sicilian Extra Virgin Olive Oil
- 2 cloves garlic, thinly sliced
- 1/2 cup coarse breadcrumbs
- 1 tsp Sicilian chili olive oil (optional)
- A pinch of dried oregano
- 1 tbsp salted capers (rinsed)
Instructions:
- Bring a large pot of salted water to a boil and cook your pasta until al dente.
- While the pasta cooks, heat 2 tbsp of olive oil in a pan over medium heat. Add the breadcrumbs and toast, stirring constantly, until they are golden brown and fragrant. Remove from the pan and set aside.
- In the same pan, add the remaining oil and the sliced garlic. Once the garlic is golden (don't burn it!), add the capers and a splash of the pasta cooking water.
- Toss the drained pasta into the pan. Drizzle with the chili oil and sprinkle half the toasted breadcrumbs and the oregano.
- Serve immediately with the remaining breadcrumbs sprinkled on top for maximum crunch.
