If Sicily had a crown jewel of street food, it would undoubtedly be the Arancino. These golden, crispy rice balls are a symbol of Sicilian hospitality and abundance. Depending on where you are on the island, you might hear them called arancina (round like an orange in Palermo) or arancino (conical like Mount Etna in Catania). No matter the name, the feeling is the same: pure comfort.
Creating arancini at home is a labor of love. It’s about the patience of the simmer and the precision of the fry. The secret lies in the quality of the rice and the depth of the ragù. We use authentic Carnaroli rice because it holds its shape perfectly while absorbing all the richness of the saffron-infused broth.

Let’s get cooking. This is a simplified version of the traditional Meat & Peas Arancini we love.
Recipe: Our Simple Arancini di Riso
For the Rice:
- In a large pot, simmer 500g of Carnaroli rice in about 1.2 liters of vegetable broth.
- Stir in a pinch of saffron (dissolved in a little warm broth) and a knob of butter.
- Once the liquid is absorbed and the rice is tender, stir in a handful of grated Parmigiano Reggiano.
- Crucial step: Spread the rice out on a large tray and let it cool completely. If it’s warm, it won't hold!
For the Filling:
- Sauté finely chopped onion, carrot, and celery (the soffritto) in Sicilian olive oil.
- Add ground beef, brown it well, and deglaze with a splash of wine.
- Stir in your tomato passata and a handful of sweet green peas. Let it simmer until very thick.
- Let the ragù cool completely.
The Assembly:
