A real Sicilian gelato uses a base known as crema rinforzata. It is crafted primarily with high-quality whole milk and sugar. The magic thickener? Cornstarch.

By using starch instead of eggs, the gelato becomes lighter in fat but incredibly dense and smooth. More importantly, because there is no egg to mask the flavor, the primary ingredients, like our Bronte pistachios or fresh lemons, shine with a clarity that is simply unforgettable.

This history is why we chose the name Castanea, inspired by Il Castagno dei Cento Cavalli, the ancient chestnut tree on Mount Etna that has stood for thousands of years. It represents our commitment to preserving a heritage that is as timeless as the landscape itself.
